So, funny story actually.. Hannah and I made these cupcakes back in August for my brother’s birthday. HA. These are honestly so much fun and my brother got a good laugh out of them. He’s a sophomore in high school for background context. Not only are they fun to look at, but they are also really tasty. The cupcakes are moist and the chocolate buttercream is fluffy and sweet. My brother isn’t an icing person and even he liked it! So, if you’re looking for something fun to bake for a friend or emoji-themed party, these are gonna be your go to cupcakes. So, if you want to know how we make moist, chocolatey cupcakes every time; keep reading!
So, for these bad boys we used a box mix (oh my) but enhanced it a little bit. I like this box mix recipe because it makes it super easy on me when I’m running behind (frequently) or want some really good cupcakes quick! So here’s what you’re going to add to any box mix for cupcakes (and cake) for moist and rich desserts every time:
- add 1 more egg than what is called for; most box mixes ask for 3; so use 4!
- a box of instant pudding mix matching the flavor you’re using; for Devil’s Food; we used chocolate!
- Add
watermilk as listed on the box!
Voila! You have thick, mousse like cake batter for a cake (or cupcakes) made for a king!

You can add these things to your grocery list:
- 12 oz. semi-sweet chocolate chips
- 3 tablespoons of Hershey 100% Dark Cacao Powder
- 2 cups softened unsalted butter
- 4 tablespoons whole milk
- 3 cups of sifted confectioner’s powdered sugar
