Hey y’all! I’m really excited to share with you this week’s super easy, super inexpensive meal prep! After perusing Pinterest on Sunday morning, I came across a recipe for Southwest Sweet Potato Bowls. I’ve been trying to ~not~ eat some form of rice every week (@ Trader Joe’s frozen chicken fried rice) so this recipe was perfect!
Southwest Sweet Potato Bowls (Original Recipe)
I already had olive oil and all the seasonings at home, so all I had to buy were 2 sweet potatoes, 2 limes, some corn, and a can of black beans. Grand total? $5.24. I spent almost as much on 2 pounds of green grapes, so this meal was 100% a W.
I couldn’t find any canned corn among the sea (mob?) of people at Trader Joe’s Sunday morning, so I nabbed these corn on the cob, heated them in the microwave, and cut the kernels off. If I had bought canned corn, I know this recipe would’ve cost me about $4!
The OG recipe calls for “southwest seasoning,” but this everyday seasoning from Trader Joe’s has basically the same ingredients.
A drizzle of olive oil and a sprinkling of seasoning and then these sweet potatoes were ready for a little roast in the oven. 25 minutes, in and out!
In the meantime, I prepared the corn and rinsed the black beans, then tossed them in a bowl with lime juice and a little bit of cumin, salt, and pepper.
Side note, how do you pronounce cumin? Is it “q-min” or “coo-min”? Let me know what you think in the comments!
Once the potatoes were done roasting, I just threw everything on a plate with a lime wedge and THAT’S IT. DONE WITH DINNER FOR THE WEEK. 4 SOUTHWEST SWEET POTATO BOWLS. IN 1 HOUR AND FOR $5. #WINNING.
Would you be surprised that I’m eating one of these bad boys as I type this post (one hour before it goes up, of course)? I added a little shredded Mexican 4-cheese mix for some flair. And because #cheese is life.
This recipe would also be really good with some chicken or even pork for more protein!
So that’s my meal prep for this week! Southwest Sweet Potato Bowls are definitely going in the metaphorical recipe box for when it gets cold this winter.
