The most important (+ my favorite) meal of the day is breakfast! It is so crucial at all stages in life, but especially in college. You aren’t going to want to go to your first lecture of the day whether it’s 8 am or 1pm without any brain power! You have got to stock up on some good nutrients to get your body powered and ready for the day. I’ve recently been playing with breakfast recipes and combos that save me time but don’t sacrifice any of the healthiness that I can get on the weekends or in the summertime when I’m not working!
Today, I’m telling you all about my favorite of the moment breakfast meals! I am obsessed with smoothies and fruit bowls and you can make them pretty and be out the door just as fast! Trust me, I put a 10 minute limit on all of these, and some you can multi-task while they cook! Also, the meals all get extra bonus points because you can prep for all of them the night before!
PB&B Chia Oatmeal Bowl
This one is a go-to and is especially perfect for days you hit the gym in the morning aka when you are feeling super ambitious. It’s likely not Monday, lol. It has some of my favorite ingredients and even though oatmeal might not be your jam yet. I guarantee it will be!
Ingredients:
Peanuts Only Peanut Butter- I throw mine in the fridge so it’s a little thicker!
One-Half of A Medium Banana
1/4 Teaspoon Chia Seeds
1/2 Cup Rolled or Steel Cut Oats
1 Cup Water
1 Packet of Truvia [optional]
Just make the oatmeal as described on the package- mix oats, water, and truvia packet and then throw in the microwave! I then top the oatmeal with sliced banana pieces, a tablespoon of peanut butter, and sprinkle with the chia seeds. DELICIOUS. Really, I think the best thing about this meal is that it is relatively inexpensive to make and you don’t need to be a chef to make it.
Fresh Fruit Parfait & Sometimes an Egg!
I doubt that I would have actually made this in the dorm unless it was a weekend, but with this super small pan from The Original Green Pan that I got last summer, it would have made it a lot easier. I like this breakfast for days when I needs ton of energy and brainpower, think test days and morning work outs! I vary how exactly I cook my eggs, but my favorites are friend hard and scrambled.
I have a major sweet tooth, and fruit does it for me so I can avoid donuts and other sweet breakfast-y things with little to no nutritional value! My favorite greek yogurt is the Danon Vanilla flavor, and if you have tried Chobani and didn’t like it…. try this stuff! It’s so dang good. I top either a 1/2 cup of self serve or the pre-made containers with slices of strawberries, blackberries, and raspberries. I also like to top with granola and chia seeds for extra goodness!
Ingredients
1 Medium Egg [Bless Up for the 6 Pack of Eggs]
Salt & Peppa to taste
1/2 Cup of Vanilla Greek Yogurt
2 Sliced Strawberries
8 Raspberries
6 Blackberries or A Handful of Blueberries
Sprinkle of Chia seeds
1/4 Cup of granola
Smoothie Bowl
So, yes this is an easy way to be super trendy in the morning, but also is super healthy and fills me until lunch time. Although, I still eat every 2-3 hours and fit in a Kashi Granola Bar! I recently picked up a NutriBullet and I am so happy that I got it because I use it almost every day! It’s the perfect little blender and perfect for small spaces. My sweet tooth is serious and this smoothie has become the perfect treat in the morning and curbs that “I really could go for a double chocolate donut right now” feeling.
Ingredients
1 Cup of Spinach
1/2 Frozen Banana
1/4 Cup Frozen Mixed Berries
1/4 Cup Frozen Mango
Spoonful of Vanilla Greek Yogurt
1/4 Teaspoon of Chia Seeds
1/2 Cup No Sugar Added Vanilla Almond Milk
